STUDY NILAI TAMBAH AIR NIRA MENJADI GULA MERAH DI DESA BULUH AWAR, KECAMATAN SIBOLANGIT, KABUPATEN DELI SERDANG
Abstract
Pada umumnya, petani tanaman Enau atau lebih dikenal dengan tanaman Aren (Arenga pinnata Merr) mengambil hasil panennya dari buah yang diolah menjadi kolang-kaling, daun yang digunakan untuk membuat atap, lidi menjadi sapu ataupun menjadi kerajinan tangan lainnya serta mengambil air aren segar sebagai bahan bahan baku pembuatan minuman tuak. Pengubahan dan peningkatan manfaat air nira menjadi gula merah di Desa Buluh Awar, Kecamatan Sibolangit tidak diikuti dengan ratio nilai tambahnya. Hasil ratio nilai tambah air nira menjadi gula merah lebih kecil dari 50%. Diperlukan inovasi baru pengolahan air nira menjadi produk gula aren dengan bentuk dan kemasan yang lebih menarik perhatian konsumen.
